Easy Zucchini Parmesan Bread Recipe
3 cups all-purpose flour 1 cup zucchini, peeled, shredded, well-drained
1/3 cup granulated sugar 3 tablespoons grated Parmesan cheese
1 teaspoon baking powder 1/2 teaspoon baking soda
1 teaspoon salt 2 eggs, beaten
1/3 cup margarine or butter, melted 1 cup buttermilk
1 tablespoon grated onion

In a large bowl, combine flour, zucchini, sugar, Parmesan cheese, baking powder, baking soda and salt.

In another bowl, combine eggs, margarine or butter, buttermilk, and onion; stir into flour mixture. Batter will be thick. Spread in a greased and floured 9x5x3-inch loaf pan. Bake at 350 degrees for 1 hour. Insert toothpick to test for doneness.
